Meringue Martini

• 200ml pasteurised egg white
• 50ml vanilla syrup
• 50ml passion fruit syrup
• 3g xanthum gum

Method

Whisk all the ingredients together with an electric whisk until it triples in volume and is light and fluffy. Carefully put this mixture into a whipped cream dispenser and place in the fridge for an hour.

For the cocktail, (Makes one drink)
In a cocktail shaker, add
• 25 ml good quality vodka,
• 25ml limoncello,
• 10ml vanilla syrup,
• 15ml lemon juice
• 15 ml fresh lime juice.

Shake this vigorously with ice and taste the mix to ensure the balance is correct. Strain the cocktail into a chilled martini glass. Dispense 75ml-100ml of meringue mix to float on top of the cocktail. Use a blowtorch to add colour to the meringue but be careful not to burn it.
